Hummus Plate


½ Zucchini
½ cup cooked Quinoa
2 tbsp Tehina or Avocado- cashew Sauce (Find the recipe here)
½ cup homemade hummus (Find my recipe here)
½ Sweet potato
½ Beetroot
1 tbsp coconut oil
1 tsp turmeric
1 tsp paprika powder
¼ tsp salt
1 tbsp Tehina

  • Add the coconut oil, turmeric, paprika and salt to a bowl
  • Cut the sweet potato and beetroot into thin slices and mix them into the bowl with the spices and coconut oil. Place them on a baking sheet and into the oven for 45 minutes (180 degrees)
  • cut the zucchini into fettuccini like shapes with a peeler, let the zucchini simmer for 5 minutes
  • place all the food on a plate, drizzle the tehina/ avocado- cashew sauce on the sweet potato and beet root & the avocado- cashew cream on the zucchini


The Feel-Good Element:

This delicious meal is rich in a variety of nutrients, it is filling and also a great one for take-away. Tehina is a great source of calcium, which is important for bone, heart, muscle and nerve health. The Tehina together with the chickpeas (hummus) and quinoa gives you plenty of protein. Protein is not only important to sustain and build muscle mass, but also for concentration, memory and a stable mood.
