2 Cups Cubed Cooked Sweet Potato
3 Cups Fresh Spinach
1 Cup Cooked Yellow Lentils
1 Cup Coconut Cream
1 tsp Curry Powder
½ tsp Turmeric
¼ tsp Salt
Cooked Brown Rice
Optional: Fresh Coriander
- Pour the coconut cream into a pan, add the spices and bring it to boil. Once it has boiled lower the heat so that the liquid only simmers
- Add all the vegetables and cook everything for about 10 minutes on low heat
- You can eat the meal immediately or leave it in the pan for a few hours. The longer you leave it in the pan, the more intense the taste
- Serve the curry together with brown rice and add some coriander if you like

This curry is the perfect warming winter dish. What I like about it is that you can pre- cook it and then just warm it up and it will actually intensify the taste. Lentils are known to be one of the healthiest foods. They are rich in protein and a variety of minerals and vitamins, such as iron, magnesium, folate, potassium, vitamin B6 & 1, and fiber. Sweet potatoes are also rich in potassium, magnesium and iron. These minerals regulate heartbeat, nerve signals, balance our energy levels, and support a healthy immune system.
